This is without doubt one of the most delicious, cost effective meals I have ever had. If curries are your Achilles heel, give this a go!

Ingredients

400g red lentils

2 tsps turmeric

1 Red onion, diced

1 tablespoon of coconut oil

2 tsps cumin

1 tsp ground coriander

1 tsp garam masala

thumb-sized piece of fresh ginger, finely grated

2 crushed garlic cloves

handful of cherry tomatoes, diced

1 teaspoon of chilli flakes

Method 

in a dry pan fry the spices and chilli flakes for 2-3 minutes.

Add the coconut oil, red onion, garlic cherry tomatoes and ginger. Fry until onions brown and are softened.

Add 4 cups of vegetable stock. Add the lentils and cook for 20-25 minutes.

Serve with a generous dollop of coconut yoghurt!
